Some people knit. I wrap dumplings.

It is actually very calming after you get the hang of it. For a few minutes – depending on how many you are making at the time – there is only one thing in your mind – not messing them up.

You will eventually get back to thinking about Schrödinger, taxes,  the essence of life and talking to the voices in your head. So just seize the moment.

Now back to dumplings (or potskickers. Or gyozas)

What went in (the food processor):

1 onion
1 garlic clove
1 cup of parsley (I put the parsley in the processor first, a few pulses and removed it. I didn’t want soggy parsley)
2 fish filetts (mine are tilapias)
1 tablespoon fish sauce
1 tablespoon bonito flakes.

After that, you let the processor work and get ready to wrap! ( I cheated and bought frozen wrappers)

I still don’t think my wrapping is perfect but I guess it’s pretty OK for my 3rd time around.

You can steam, boil or fry them. I prefer them steamed.
